There’s nothing better than the smell of something wonderful baking in your oven… except maybe sharing it with someone you love… Try this amazing Huckleberry and Gravenstein apple crisp from Nick’s Cove and Cottages… to die for!
Huckleberry and Gravenstein Apple Crisp
½ cup old fashioned oats
2 tablespoons flour
1 teaspoon salt
¼ cup brown sugar
2 tablespoons butter, cold and diced
¼ cup toasted chopped walnuts
4 cups sliced Gravenstein apples
1 cup Mendocino huckleberries
2 tablespoons sugar
8×8” baking dish
Preheat the oven to 375°F. Place oats, flour, salt, brown sugar and butter in a mixing bowl. Using your hands, blend the butter into the dry ingredients until you have a nice crumbly texture. Add the nuts and incorporate into mixture. Chill for 20 minutes.
Meanwhile, peel and slice the apples. Toss with the huckleberries and season with the sugar, adding up to two tablespoons, depending on how tart the fruit is. Place into an 8×8 baking dish, sprinkle the crisp mixture on top and bake for a half hour until apples are bubbling and the crisp topping is golden brown. Let sit for 20 min. Serve warm with vanilla ice cream.
